A triangle bounded by the towns of Goondiwindi, Mullaley, and Tamworth in northern New South Wales, has become famous for producing the world’s best durum wheat. In this ‘Golden Durum Triangle’ north of Tamworth, the rich, dark soil and climate provide the perfect growing conditions. All Bellata Gold grains are sourced from this region.
To preserve the integrity and nutritional levels of the soil, Bellata Gold farms practise crop rotation. We use select grain varieties that have been developed to complement the region and provide strong plants with high-protein, high-gluten grain. This is the foundation of a growing process that is sustainable and ensures award-winning highest grade (DR1) quality.
When harvest time comes, we gather our grains paddock-by-paddock, farm-by-farm, identifying each batch by its paddock and farm of origin. They are transported to our mill in Tamworth and stored only in silos. Only Golden Durum Triangle grain from our own farms or trusted regional farms is included.
Every batch of grain is tested before milling. The milling facility meets the stringent HACCP food management system certification. Milling is a multi-stage process to turn the durum wheat into semolina – an unrefined product that contains the endosperm of the grain. Semolina is less refined than wheat flour and comes in different grades of coarseness.
We can mill to custom specifications for our bulk supply partners and continue to refine our approach to ensure quality, efficiency, consistency and cost competitiveness.
